6) Thai Green Curry with Vegetables
Ingredients

2 tbsp green curry paste

1 can coconut milk

1 cup vegetable broth

2 cups mixed vegetables

1 tbsp fish sauce (optional)

1 tsp sugar

Fresh basil
-
Cooked jasmine rice
Instructions

Heat curry paste 1 minute.

Add coconut milk and broth.

Add vegetables; simmer 10–15 minutes.

Season with fish sauce and sugar.

Garnish with basil. Serve over rice.
