6) Thai Green Curry with Vegetables

Ingredients

  • 2 tbsp green curry paste

  • 1 can coconut milk

  • 1 cup vegetable broth

  • 2 cups mixed vegetables

  • 1 tbsp fish sauce (optional)

  • 1 tsp sugar

  • Fresh basil

  • Cooked jasmine rice

Instructions

  1. Heat curry paste 1 minute.

  2. Add coconut milk and broth.

  3. Add vegetables; simmer 10–15 minutes.

  4. Season with fish sauce and sugar.

  5. Garnish with basil. Serve over rice.
