Here’s a quick and easy 5-Minute Coconut Butter Cookie recipe — perfect when you want something buttery, coconutty, and sweet right now. These come together fast, with minimal ingredients!


🥥 5-Minute Coconut Butter Cookies

🛒 INGREDIENTS:

  • 1/2 cup (1 stick) unsalted butter, softened
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 cup sweetened shredded coconut
  • Pinch of salt

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter & sugar:
    In a bowl, mix softened butter and sugar until smooth and fluffy (use a fork, hand mixer, or just elbow grease!).
  3. Add vanilla & dry ingredients:
    Stir in vanilla extract, then add flour, shredded coconut, and a pinch of salt. Mix until dough forms — it may look crumbly at first but will come together.
  4. Form cookies:
    Scoop about 1 tablespoon of dough, roll into a ball, then flatten slightly on the baking sheet. Repeat with remaining dough. Leave space between cookies.
  5. Bake:
    Bake for 10–12 minutes, or until edges are lightly golden. Cool on the pan for a few minutes, then transfer to a rack.

Optional Add-Ins:

  • 1–2 tablespoons of coconut milk or cream (for extra moisture)
  • A drizzle of melted chocolate on top after baking
