Ingredients

For the donuts:

  • Vegetable oil, for deep frying

  • ½ cup water
  • 1 tsp lemon juice
  • ½ tsp rose water or vanilla (optional, for flavor)

For topping:

  • ½ cup crushed pistachios

Instructions

  1. Prepare the dough:
    • In a large bowl, combine warm milk, sugar, and yeast. Let it sit 5 minutes until frothy.
    • Add egg, butter, flour, and salt. Mix until a dough forms.
    • Knead for 8–10 minutes until smooth and elastic. Cover and let rise 1–2 hours, or until doubled in size.
  2. Shape the donuts:
    • Roll out dough on a floured surface (about ½ inch thick).
    • Cut into rounds with a donut cutter or two different-sized cutters.
    • Place on a tray, cover, and let rise again for 30–40 minutes.
  3. Fry the donuts:
    • Heat oil in a deep pan to 350°F (175°C).
    • Fry donuts in batches until golden brown on both sides (about 2 minutes each side).
    • Remove and drain on paper towels.
  4. Make the sugar syrup:
    • In a saucepan, combine sugar, water, and lemon juice. Bring to a boil, then simmer for 5–7 minutes until slightly thickened.
    • Add rose water or vanilla, stir, and remove from heat.
  5. Glaze the donuts:
    • While still warm, dip each donut in the sugar syrup.
