Old-Fashioned Rice Pudding
This creamy and comforting Old-Fashioned Rice Pudding recipe is a perfect dessert for any occasion. With simple ingredients like rice, milk, sugar, and eggs, this recipe offers the rich, velvety texture you remember from childhood. It’s a classic that never goes out of style.
Ingredients:
- 1 cup white rice (long-grain or medium-grain)
- 2 cups whole milk
- 1/2 cup heavy cream
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- Ground cinnamon (optional, for garnish)
Instructions:
- Cook the Rice:
- In a medium-sized pot, combine the rice and 2 cups of water. Bring to a boil, then reduce the heat and cover. Let the rice cook for about 15-20 minutes, until it’s tender and most of the water is absorbed.
- Make the Pudding:
- In a separate medium saucepan, combine the cooked rice, whole milk, heavy cream, and sugar. Bring the mixture to a simmer over medium heat, stirring occasionally to ensure it doesn’t stick to the bottom.
- Once it starts to simmer, reduce the heat and cook for about 20-25 minutes, stirring frequently, until the pudding thickens and becomes creamy.
- Temper the Eggs:
- In a small bowl, whisk the eggs. Gradually add a little of the hot rice mixture to the eggs, stirring constantly (this is called tempering). Slowly pour the egg mixture back into the pot, stirring continuously to avoid curdling the eggs.
- Finish Cooking:
- Continue cooking the pudding over low heat, stirring constantly for about 5 minutes until it thickens further. The pudding should coat the back of a spoon.
- Flavor the Pudding:
- Stir in the vanilla extract and mix well.
- Serve:
- Spoon the rice pudding into individual bowls and let it cool slightly. You can serve it warm, or chill it in the fridge for a couple of hours for a cooler treat.
- Optional Garnish:
- Dust with ground cinnamon before serving for extra flavor and decoration.
Enjoy this creamy, sweet dessert with a comforting, nostalgic touch!
