Baked Apple Oat Cups

Ingredients:

2 medium apples (chopped into small cubes)

1 cup rolled oats

1 cup milk (or almond/soy/oat milk for dairy-free)

1 egg (or flax egg for vegan option)

2–3 tbsp honey or maple syrup

1 tsp baking powder

1 tsp cinnamon

½ tsp vanilla extract

A handful of raisins or nuts (optional)


Instructions:

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, mix oats, baking powder, cinnamon, and chopped apples.
  3. In another bowl, whisk together milk, egg, honey, and vanilla.
  4. Combine wet and dry ingredients, then gently fold in raisins or nuts if using.
  5. Pour the mixture into greased mugs or ramekins (as shown in the photo).
  6. Bake for about 25–30 minutes, until golden brown and set in the middle.
  7. Serve warm, straight from the cup – perfect for breakfast or a snack!
