Best Fluffy Pancake Recipe
Ingredients:
- 1 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 tablespoon granulated sugar
- 1 ¼ cups milk (dairy or non-dairy)
- 1 large egg
- 3 tablespoons melted butter (or neutral oil)

Instructions:
- In a large bowl, whisk together the flour, baking powder, salt, and sugar.
- In another bowl, mix the milk, egg, melted butter, and vanilla until smooth.
- Pour the wet ingredients into the dry and stir gently until just combined (don’t overmix; the batter should be slightly lumpy).
- Heat a nonstick pan or griddle over medium heat and lightly grease with butter or oil.
- Pour about ¼ cup of batter for each pancake.
- Cook until bubbles form on the surface (about 2 minutes), then flip and cook another 1–2 minutes until golden brown.
